Russian ”Honey Cake” recipe. Cheers to 2017!

In order to start this year with something tasty, I’ve decided to share with you a Honey cake (medovik in russian) recipe from my childhood. As you may know or not, I grew up in a small Russian city and my mom still cooks this cake for any occasions, such as birthdays, new years or for a family gathering. This tasty recipe is super easy to make and it will be a great addition to your table. Also, the name itself doesn’t make sense at all, because you only use 3 tbsp of honey, however, at the end of it, it does taste like honey!
So, here we go… but I would definitely recommend to planned ahead and start the cake a day early because it will be better for the filling to soften the layers.
Cookie layers(appx. 6 of them):
(22-25 cm in diameter ) perfect for 6-8 people
1 cup of sugar
2 cups of flour + 1 cup during rolling (I use all-purpose one)
3 tbsp of honey liquid (I use 100% natural raw honey)
2 tsp baking soda
1 tbsp vinegar (9% preferably wine vinegar)
1 cup of sugar
1 cup of sour cream (20-30%)
200 gr of butter (home temperature)
or you can also use instead of sugar and butter – 1 can of sweetened condensed milk
blackberries and blueberries or anything from your choice, be creative 😉
Also, if you want to make more layers, just double up the ingredients.
Heat oven to 360 degrees F. get at least 2 baking sheets, otherwise, it will take more time for you to cook layers. Grease the baking sheets with a good amount of flour (i don’t use the parchment paper).
Prepare a water bath and combine eggs and sugar, whisk it for 3-5 minutes then add the honey liquid. Add one cup of flour and keep whisking it on the water bath, add the baking soda and one more cup of flour at the end add vinegar and remove it from the heat and set aside for 2 to 3 minutes
Once the dough cooled off, flour your counter and divide the warm dough into 6 even pieces. Start rolling the first round layer according to your baking form (appx. 10-inch circle) and slide your circle layer into a baking sheet and bake for 5-7 min. so meanwhile the first one is baking, do it all over again with the rest of the layers.
Once the layers completely cool, we can start preparing the cream. Combine sugar, sour cream, and butter in a large bowl. Place the first layer and put the sour cream mixture on top, and keep doing the same thing with the rest of the layers. Put the cake in the fridge overnight.
Step 5. Decoration
Grind the rest of your baking dough in a blender or you can cover your cake with the rest of the sour cream mixture. Decorate with the fruits that you love or make occasional decoration (or like I did in my pics below – winter decorations).
If you don’t want to wait overnight, you can serve the cake an hour later and share it with your loved ones. <3
